Trans fats are unsaturated fatty acids which have been hardened or hydrogenated in the manufacturing of commercial foods such as margarine, cakes and biscuits. Food manufacturer use hydrogenated fat because they can improve shelf life and stability of a product.
Highly unsaturated vegetable oils, such as safflower or sunflower oil are not stable enough to use in some food products because they develop "off flavors" within a short period of time. Check the labels of snack food and bakery products and you will see that many list "hydrogenated" oil as one of the ingredients.
Downside of Trans fat
Trans fats are nutritionally similar to saturated fats or worse as they raise blood LDL cholesterol levels and may lower 'good' HDL cholesterol. There is no nutritional requirement for these trans fats in the diet, so they add needless calories and are best to be avoided.
