Ingredients for Low Fat Turkey Steak
450g small new potatoes
225g runner beans, trimmed and thickly sliced
2 tbsp Cajun seasoning
4 turkey steak fillets
3 tbsp olive oil
finely grated zest and juice of 1 lemon
1 garlic clove, crushed
3 firm tomatoes, seeded and cut into chunks
Preparation Method For Low Fat Turkey Steak
1. Boil potatoes for 8 minutes. Add the runner beans, cover and cook for 4 minutes.
2. Sprinkle the Cajun seasoning on both sides of each turkey steak. Heat one tablespoon of oil a large shallow frying pan and fry the steak for 3-4 minutes until they start to brown nicely. Add the lemon zest and juice and bubble briefly to reduce slightly.
3. Drain the potatoes and beans. Warm the remaining oil in the pan; stir in the vegetables, garlic and tomatoes. Cook for 1-2 minutes, tossing until the vegetables are just coated. Serve turkey with pan juices.
