Ingredients For Pepper Fried Chicken
200g carton Greek yogurt
2 tbsp chopped fresh mint
juice of 1 lemon
good sprinkling of salt
1 heaped tbsp coarsely crushed peppercorns
4 boneless chicken breast
2 tbsp oil
new potatoes and salad to serve
Preparation Method For Pepper Fried Chicken
1. Mix together the yogurt and mint with a squeeze of lemon juice; season and set aside. Mix together the salt and peppercorn. Drizzle the chicken breast with little lemon juice, then rub the salt and pepper mixture evenly over each breast.
2. Heat oil in a large frying pan. Add chicken and cook for 6-7 minutes on each side until the chicken is cooked through and golden.
3. Squeeze over the remaining lemon juice. Serve chicken with the minty yogurt, new potatoes and salads.
