Tuna and Tomato Rice (Serves 4)

Ingredients For Tuna and Tomato Rice

Preparation Method For Tuna and Tomato Rice

1. Cook the rice in salted boiling water for 10-12 minutes, or as directed on the packet.

2. Meanwhile, heat the oil in a pan and fry the garlic, onion and bacon for 5 minutes, stirring often.  Add the mushrooms and cooked for another 2-3 minutes.  Stir in the tomatoes and tuna and season well.  Heat through for 5 minutes.

3.  Drain the rice, stir in tomato sauce with the parsley, mixing gently.  Serve with garlic bread.
