Grilled Cod (2 servings)

Ingredients For Grilled Cod

Preparation Method For Grilled Cod

1. Preheat the grill.  Mix the yogurt and pesto, and one tbsp of parsley or dill.  Season and pour over the fish fillets in a shallow ovenproof or microwaveable dish, covering them completely.

2. Grill for 4-5 minutes without turning until the fish fillets are cooked through to the middle.  Or cover the dish with cling film and microwave on High for 3 minutes.

3. Sprinkle the remaining or dill over the dish and serve with salad and crusty bread.
